Goulash (Beef and macaroni everything stew)
Ingredients
ground beef | 1-2 lb | |
garlic cloves | 3+ | |
onion | 1 large | |
olive oil | 2 Tbsp | |
beef broth | 1 15-oz. can | |
whole or diced tomatoes | 1 15-oz. can | |
Worcestershire sauce | 1 Tbsp | |
salt, more to taste | 1 tsp | |
italian seasoning | 2 tsp | |
black papper | 1/2 tsp | |
elbow macaroni | 2 cups | |
shredded parmesan | ||
chopped fresh parsley | ||
Veggies - think kidney beans, canned corn or green beans, carrots, cabbage, kale/spinach/bok choy, bell pepper, the more veggies the better 🙂 |
Place the oil in a large dutch oven or pot and place over medium-high heat. Once hot, add the onion, garlic and celery and cook until slightly softened, about 3 minutes. Add the
ground beef, breaking it up into little pieces with a wooden spoon, and cook until no pink remains, about 5 minutes.
Add the beef broth, canned tomatos, choice of veggies (anything works in Groulash~ get creative, or just fridge and freezer dump!)
1/2 cup water, Worcestershire sauce, seasoned salt and seasonings. Stir to combine and return to a simmer.
Add the macaroni and return the pot to a simmeronce again. Reduce heat to medium low and cook for about 12 minutes, until the macaroni is tender, stirring occasionally. Top with grated parmesan and fresh herbs if you have em!
